Five-Day Salad from the Kick Diabetes Cookbook: An Action Plan and Recipes for Defeating Diabetes. This would be a great Christmas Gift. Check out Brenda Davis RD. This salad is calcium-rich and easy to make. Ingredients: 3 cups stemmed and very thin sliced kale, 3 cups bite-size pieces romaine lettuce, 3 cups thinly sliced napa cabbage (Crissie used Bok Choy), and 1 cup very thinly sliced red cabbage. Throw it all in a bowl and toss it around. Tip from Coach Crissie: Add other desired veggies to make this salad the colors of the rainbow. Details: 46 calories, 3 g Protein/0.5 g Fat/ 9 g Carb/ 3 g Fiber/ 126 mg Calcium/ 35 mg Sodium

Hearty Vegetarian Chili, Forks Over Knives

Blueberry Pie, Crust: 1 cup oats, 1 cup pecans or walnuts, 1 cup pitted dates, pinch of salt, 1 tsp vanilla, 1-2 tsp vanilla, 1-2 tbsp pure maple syrup (if needed to make the crust hold together can also add a little water). Pulse nuts and dates, salt and vanilla in food processor until finely chopped. Add oats and pulse again until crust holds together, adding syrup and water if needed. Press into pie plate. Bake at 350 degrees for about 10 minutes. Cool. Filling: 16 oz frozen blueberries, 3 cups fresh blueberries, One 12 -oz can apple juice concentrate, 1 tsp vanilla, 1/4 tsp salt, 3 Tblsp. cornstartch mixed with 3 Tblsp. water. Put juice, frozen berries, vanilla and salt in sauce pan and turn on heat. In separate container mix cornstarch and water then add berries while stirring. Heat to boiling, stirring frequently, until thickened. Cook and stir 1 more minute. Remove from heat and cool to room temperature. Add fresh blueberries and mix well. Pour into pie shell. Refrigerate until serving time.
